Ari Kondattam / Rice Kondattam / Crispy rice fries

   Ari Kondattam also known as rice crispy fries is  very popular in South India. This is the best accompaniment with rice. This can be prepared with very limited ingredients. Try this dish only in summer when the sun is at it's peak. This can be stored upto 1 year.

INGREDIENTS :-

* Raw rice - 3 cup

* Pepper powder - 1 tbs

* Chilli powder - 1 tsp

* Cumin seed - 1 tbs

* Sesame seeds - 1 tbs

* Asafoetida powder - 1 tsp

* Salt - to taste

METHOD :-

* Wash ans soak the rice for 4-6 hours. 

* Then strain it. 

* Grind it by adding enough water. 

* Measure the grinded rice. For 1 cup grinded rice needs 2 1/2 cup of water. So you can take how much water needed for your grinded rice. 

* Mix the water and the grinded rice paste. 

* Heat a thick bottom khadai, add this. 

* Then add cumin seed, sesame seeds, asafoetida powder, pepper powder, chilli powder and salt. 

* Stir it continuously to avoid the lumps. 

* When it  starts bubbling, it becomes thick paste. It takes nearly 8 - 10 minutes. 

* Turn off the flame. 

* Let it cool down. 

* Take a murukku press with star shape mould. 

* Fill the dough. 

* Take a cotton cloth or a foil paper. 

* Squeeze the murukku press over the cloth and sun dry it for 2-3 days. 

* If you are using the cotton cloth, when the Kondattam is dried. Just spray some water on the othe side of the cloth. Then take the Kondattam from the cloth. If you are using foil paper skip this process. 

* Again sun dry it for 1 day. When the sun is at the peak it takes 2 days to dry. 

* Store it upto 1 year in room temperature. 

* Deep fry in oil and serve it when ever you want.
