         Aval Upma/ Poha upma / Flattened rice upma           Aval upma is a quick, easy, simple and healthy breakfast recipe made with flattened rice. This is a mild tasty dish made by cooking poha with some tempering.         Pappadam Thoran / Pappadam stir fry/ Easy side dish        Are you bored with regular stir fry. Want to try something different, yet tasty.. Then try this pappadam thoran. It's very easy to make and a good  accompaniment to rice or can be eaten as a snack.  INGREDIENTS :- * Pappadam - 5 * Shallots - 15 * Garlic - 2 * Chilli powder - 1 tsp * Curry leaves - 1 sprig * Salt - to taste * Oil - for frying METHOD :- * Cut the pappadam into small pieces.  * Deep fry the pappadam in  two batches until crispy. Set aside.  * To a mixer jar add shallots and chilli powder. Grind it in 1 or 2 pulse mode.         Kerala parotta / Nool parotta            Malabar parotta or Malabar parotta is a flaky layered flatbread. It's a popular Kerala dish goes well with beef curry or chicken curry or veg salna. The dough is allowed to rest for many hours to make soft and flaky parotta. Another tip for soft parotta is the parotta dough needs 64% water.  INGREDIENTS :- * All purpose flour - 3 cups * Sugar - 1 tbs * Ghee - 4 tbs * Refined oil - 4 tbs * Salt - to taste * Baking soda - 1 pinch * Water - 1 cup + 1 tbs METHOD :- *  Mix the ghee and oil. Set aside.  * To a bowl add flour, sugar, baking soda and salt. Combine it.  * Add water (room temperature) gradually. Mix it.
