Yemeni Roti

      Yemeni roti is a particularly soft bread because it has several layers, similar to puff pastry. It takes a little time to prepare, but the effort is worth it because you are rewarded with pure indulgence. You can enjoy with chicken curry, mutton curry and more. 

INGREDIENTS :-

* All purpose flour - 2 cup

* Steamed rice - 1 cup

* Sugar - 1 tsp

* Water - 1 cup

* Salt - as needed

* Oil - as needed

METHOD :-

* To a blender add steamed rice and water. 

* Blend it nicely. 

* To a bowl add the steamed rice paste, all purpose flour, sugar and salt. 

* Knead it to a soft Non-sticky dough. 

* Apply some oil all over it and cover it with a wet cloth. 

* Let it rest for 1 hour. 

* After 1 hour divide them into equal sized balls out of this. 

* Spread oil on it to avoid the dryness. 

* Spread some oil on the counter top. 

* Take one dough ball. 

* Flatten to a very thin sheet with a roller. 

* Spread some oil all over it. 

* Then fold one third of one side towards the middle. Spread some oil on the folded side. 

* Then fold the other side towards the middle and place it over the folded side. 

* Spread some oil over it. 

* Then fold from the top portion towards the middle. Spread some oil. 

* Fold the other side and place it over the folded side. 

* Follow the same process till the dough finished. 

* Let it rest for 15 minutes. 

* After 15 minutes flatten it again like slightly thin flatbread. 

* Heat a tawa. Place the roti on the hot tawa. 

* When small bubbles appear, flip it. 

* Spread some oil on both sides and cook till it cooks well. 

* Remove from the flame. 

* Tasty Yemeni roti is ready to serve.

Then fold one third of one side, lengthwise, towards the middle. Sprinkle butter on the folded side.
