Perfect Mango sticky rice with basmati rice
This mango sticky rice is creamy, sweet and fresh, a delicious Thai dessert combining sweet coconut rice with fresh sweet sliced mango. The fresh sweet and juicy ripe mangoes with sweet sticky rice will blow your mind. The classic version of mango sticky rice recipe uses white sticky rice.
But here I made this recipe with basmati rice. This is very easy method with minimal ingredients without compromising the taste.
INGREDIENTS :-
* Basmati rice - 1/2 cup
* Second coconut milk - 1 1/4 cup
* Thick coconut milk - 3/4 cup
* Rice flour - 1 tsp
* Sugar - 3 1/2 tbs
* Sesame seeds - as needed
* Ripe Mango - as needed
* Salt - one pinch
METHOD :-
* Wash and soak the rice for 10 minutes.
* After that drain it.
* Add the drained rice to a pressure cooker along with 1 cup of second coconut milk, pinch of salt and 2 tbs sugar.
* Cook this for 3 whistles.
* After that, turn off the flame.
* Let the pressure completely settled.
* Then open the lid. When the rice feels little dry, add 1/4 cup of second coconut milk. (When rice is cooked well then skip this step)
* Cook for 1-2 whistles. The quantity of coconut milk and the cooking time depends on the rice we taking. Set aside.
* To the rice flour add 3-4 tsp water and make a slurry without lumps.
* To a sauce pan add 3/4 cup thick, 1 1/2 tbs sugar, rice flour slurry and a pinch of salt.
* Mix it.
* Boil this. Stir it continuously.When it starts bubbling remove from the flame.
* To the serving plate first add 1 bowl of cooked rice. Then pour the rice flour-coconut milk mixture and place the sliced mango pieces on sides of the plate.
* Tasty mango sticky rice is read to serve.
