Perfect Chilli Chicken

   Chilli chicken is a popular Indo-Chinese dish which is famous all over India. Crispy fried chicken tossed in the sauce will give a delightful treat. This restaurant style chilli chicken is made with onion, ginger, garlic and some more Ingredients pairs well with egg fried rice. 

INGREDIENTS :-

For coating :-

* Chicken - 150 gm

* Baking soda - 1 pinch

* Water - 4-5 tbs

* Salt - to taste

* Soya sauce - 1 Tsp

* Pepper powder - 1/4 tsp

* Corn flour - 1 tbs

For quick stock water :-

* Water - as required

* Stock cube - 1

For corn flour slurry :-

* Corn flour - 1 tbs

* Water - 2 tbs

For chilli chicken gravy :-

* Oil - 1 tbs

* Onion - 1/2

* Capsicum - 1/2

* Garlic - 8-10 cloves

* Ginger - 1/2 inch

* Spring onion - 3 tbs

* Coriander stem - 1/2 tbs

* Coriander leaves - 3-4 tbs

* Pepper powder -  1 pinch

* Green chilli - 2-3

* Dark soya sauce - 1 tsp

* Light soya sauce - 1 tsp

* Vinegar - 1/4 tsp

* Sugar - 1 pinch

* Oil - for frying

METHOD :-

* To a bowl add the clean chilli chicken pieces. 

For velveting the chicken, add 1 pinch baking soda and 2 tbs water first to the chicken pieces. 

* Mix the chicken vigorously in circular motion with your hands. And allow the chicken pieces to absorb water. 

* Then add the remaining 1-2 tbs of water( without baking soda for the second time). Mix it vigorously.

* Repeat the same process for 2-3 times until the chicken absorbs the water. 

* After the process it will looks slimy. 

* Once it done, add pepper powder, salt, soya sauce and corn flour. 

* Mix it. It needs only a very thin layer of coating. 

* Heat a pan add oil for deep frying. 

* When the oil becomes hot add the marinated chicken pieces. 

* Fry until light golden brown color in medium to high flame. Set aside. 

* For quick stock, boil some water along with chicken stock cube. When the chicken stock cube completely melts. Turn off the flame and set aside. Adding this stock water will enhance the taste of the gravy. 

* For making corn flour slurry, mix the corn flour with water. Set aside. 

* To make the chilli chicken gravy. Heat a khadai Or a Wok.

* Add oil. When it becomes hot add chopped ginger, chopped garlic and coriander stem. 

* Saute it in high flame for 2-3 minutes. Don't brown garlic. 

* Then add thick sliced onion and thick sliced capsicum. 

* Saute it for 1-2 minutes in high flame. 

* Once it done add the stock water. ( 400ml-500ml stock water according to your preference) 

* When it starts bubbling add light soya sauce, dark soya sauce, vinegar, pepper powder, salt and sugar. Mix well. 

* Bring the sauce to a simmer. Then add the fried chicken pieces, coriander leaves and spring onion. 

* Then add corn flour slurry. Stir it continuously. Until the correct consistency. 

* Once the desired consistency achieved, turn off the flame. 

* Garnish with some spring onion green. 

* Tasty restaurant style chilli chicken is ready.
