Crispy Potato Wedges
Potato wedges are thick slices of potatoes that are typically seasoned with herbs and spices then deep fried or baked until crispy on the outside and soft on the inside. They are popular side dish or snack and are often served with mayo dips, ketchup, sour cream. This can also be enjoyed as an appetizer. Potato wedges are easy to make starter for dinner or evening special and could be made in minutes with minimal ingredients.
INGREDIENTS :-
* Potato - 2
* All purpose flour - 1/2 cup
* Corn flour - 1 1/2 tbs
* Chilli powder - 1/2 tsp
* Kashmiri chilli powder - 1/4 tsp
* Pepper powder - 1/2 tsp
* Oregano seasoning - 1 1/2 tsp
* Salt - to taste
* Butter - 1 tbs
* Oil - for frying
METHOD :-
* Wash and peel the potato.
* Cut them into 1/4 inch slices.
* Drop them into a bowl of water.
* Boil enough water for boiling the potatoes along with salt.
* Add sliced potatoes into the water.
* Boil them until they are 3/4th cooked.
* After that remove from the flame. Then strain it and set aside.
* To a bowl add all purpose flour, corn flour, chilli powder, kashmiri chilli powder, pepper powder, salt.
* Mix them well.
* Add the cooked potatoes into this and coat them with the flour mix. Set aside.
* Then add water to the remaining flour mix and make it into a medium thick consistency batter.
* Heat oil for deep frying.
* Meanwhile dip the dusted potato pieces in the batter and coat them evenly on all sides.
* Drop them into the hot oil one by one.
* Fry them in medium flame until they turns golden brown color.
* Remove the fried wedges from the oil and keep them aside.
* Heat another pan, add butter.
* Then add the oregano seasoning.
* Saute it for a few seconds.
* Once it done add the fried potato wedges to this.
* Give them a quick mix.
* Add little salt and chilli powder and toss them.
* Tasty potato wedges are ready. Serve them with mayo dip or ketchup.
