   Sweet carrot dumplings in exotic cardamom flavored milk is a heavenly and easy to make ahead dessert for any occasion.  Here I am sharing the carrot jamun recipe without condensed milk. But the taste was awesome. Follow some tips and tricks for a delicious carrot jamun. 

  

INGREDIENTS :-

For carrot balls

* Carrot - 3

* Milk -  1 cup

* Sugar - 1/2 cup

* Semolina/ rava - 1/2 cup

* Ghee - 2 tbs

For corn flour slurry:-

* Corn flour - 1 tbs

* Milk - 3 tbs

For Milk :-

* Milk - 1/2 ltr

* Sugar - 3/4 cup

* Cardamom powder - 1/2 tsp

* Butter - 1 tbs

METHOD :-

* Peel and cut the carrot into pieces. 

* Transfer to a mixer jat. Grind to a fine paste by adding 1/2 cup of milk. 

* Heat a pan add ghee. Then add grinded carrot paste. 

* Saute it for 5 minutes in medium to low flame. 

* Then add 1/2 cup of sugar. Mix it. 

* When the sugar dissolves completely, add 1/2 cup of milk. 

* Mix it and add the semolina/ rava. 

* Mix it and cook this until it becomes thick and non sticky. 

* Let it cool down completely. 

* After cooled down make small gooseberry sized balls out of this. 

* Then steam the carrot balls for 5 minutes. 

* Remove from the flame and let it cool down completely. Set aside. 

* Make corn flour slurry by mixing 1 tbs corn flour with little milk. Set aside. 

* To a pressure cooker add 1/2 ltr milk and 3/4 cup sugar. 

* Boil this in medium to high flame. When it starts bubbling. 

* Turn the flame low. 

* Close the lid and put the whistle on it. Keep the flame very low, Do not allow the whistle to make sound. 

* Boil this for 30 minutes in low flame. 

* After 30 minutes turn off the flame. 

* Let the pressure completely gone. 

* Open the lid. The milk becomes light brown in color, that's the correct stage. At this time add butter. 

* Again boil this.  Then add steamed carrot balls and cardamom powder. 

* Allow to boil for 5 minutes in medium flame. 

* Then add corn flour slurry. Stir it continuously to avoid lumps. 

* When milk becomes slightly thickened. 

* Turn off the flame. 

* Tasty carrot jamun is ready.
