Vendakka sambar / Okra sambar/ Easy Sambar
Vendakkai sambar / Ladies finger (Okra) sambar
This easy and simple Vendakkai sambar or okra sambar is made only with okra. The roasted okra or ladies finger soaked in sambar makes this sambar soo tasty. This sambar is a good accompaniment with idli Or dosa for breakfast and also goes well with steamed rice for lunch. Instead of ladies finger you can use any veggies of your choice.
INGREDIENTS :-
* Toor dal - 1/4 cup
* Onion - 1
* Ladies finger/ okra - 9
* Tomato - 1
* Shallots - 15
* Turmeric powder - 1/2 tsp
* Sambar powder - 4 tsp
* Chilli powder - 1/2 tsp
* Asafoetida powder - 1/2 tsp
* Jaggery powder - 1 tsp
* Tamarind - 1 gooseberry sized
* Salt - to taste
* Coriander leaves - 2 tbs
For tempering :-
* Coconut oil - 1 tbs
* Fenugreek seeds - 1/4 tsp
* Mustard seeds - 1/4 tsp
* Fennel seeds - 1/4 tsp
* Dried red chilli - 2
* Curry leaves - 1 sprig
METHOD :-
* To a pressure cook add toor dal, turmeric powder, sliced onion along with enough water for cooking.
* Cook until 3 whistles or until cooked well. Set aside.
* To a pan add add 1 tsp oil. When it becomes hot add okra/ ladies finger pieces.
* Roast it until it becomes slightly brown in color. It will nearly takes for 4-5 minutes in high flame.Set aside.
* To a khadai add add 3 tsp oil. When it becomes hot add mustard seed. When it pops up add fenugreek seeds and fennel seeds. Wait to pops up.
* Then add shallots pieces. Saute it till it becomes transparent.
* To this add dried red chilli. Saute it for 1 minute.
* Turn the flame low. Then add chilli powder, sambar powder and curry leaves.
* Mix it for 15 seconds.
* Once it done add the cooked toor dal mix along with tomato pieces, fried okra/ ladies finger and salt.
* Mix the tamarind with little water. Mix it with your hands. Then strain it.
* Add this tamarind water to the sambar. Correct the consistency by adding enough water.
* Allow to boil till the raw tastes of tamarind is completely gone.
* Then add asafoetida powder.
* Finally add chopped coriander leaves and jaggery powder.
* Mix it.
* Turn off the flame.
* Tasty and easy sambar is ready.
