Egg Noodle soup
This noodle soup with egg is hearty and Heart-warming and full of flavor with vegetable stock and fresh vegetables. For a light dinner, you can just have this soup without any accompaniment.
INGREDIENTS :-
* Cooked Egg noodle - 1 cup
* Egg - 1
* Oil - 2 tsp
* Garlic - 2 cloves
* Ginger - 1/4 tsp
* Onion - 1 1/2 tbs
* Green chilli - 1/2 tsp
* Chopped carrot - 1 1/2 tbs
* Beans - 1/2 tbs
* Chopped cabbage - 1 1/2 tbs
* Chilli sauce - 2 tsp
* Soya sauce - 1/2 tsp
* Veg stock water - 1 1/2 cup
* Sugar - 1/4 tsp
* Pepper powder - 1/4 tsp
* Vinegar - 1/4 tsp
* Corn flour - 2 tsp
* Spring onion - 1 tsp
METHOD :-
* Heat a pan add oil.
* When it becomes hot add chopped onion.
* Saute till it becomes transparent. Then add chopped garlic, chopped ginger and green chilli.
* Saute it for 2 minutes in high flame.
* Then add the chopped vegetables.
* Saute in high flame for 2-3 minutes.
* Once it done add the chilli sauce and soya sauce. Mix it.
* Cook this for 1 minute.
* After that add spring onion along with stock water. Then add sugar. Mix it.
* Meanwhile crack open the egg to a bowl and just beat it.
* When the stock water starts vigorously boil drop the beaten egg slowly in circular motion to the stock water mix.
* Gently mix it with a spatula.
* Turn off the flame. Do not overcook the egg. Finally add pepper powder.
* To a bowl add the cooked noodles.
* Then pour the stock water mix to this.
* Tasty egg noodle soup is ready.
