Egg fried rice

    This is a simple dish made with eggs, cooked rice ,vegetables and soy sauce. Fried rice is a quick lunch option which is easy to make and taste delicious. This authentic fried rice doesn't contains any complicated ingredients. Here I am using basmati rice but you can also substitute with jasmine rice. 

INGREDIENTS

* Cooked basmati rice - 1 cup

* Egg - 2

* Soy sauce - 2 tsp

* Spring onion - 1 tbs

* Capsicum (optional) - 1 tbs

* Oil - 1 tbs

* Salt - to taste

* Pepper powder - as needed

METHOD :-

* Crack open the eggs. Gently beat it. 

* Heat a wok or khadai. Add oil. 

* When it becomes hot add the eggs. 

* Lower the heat. Scramble on a medium heat. If your pan is too dry add more oil. When the eggs are just cooked (soft set), sprinkle little salt. Do not use lots at this stage as the sauce is salted. 

* Turn the flame high, add the cooked rice. .Mix it until the rice slightly pops up. 

* Then add pepper powder. Mix it. 

* After that add  the soy sauce to the hot wok or khadai. When the sauce hits the hot pan it sizzles.So that it gives a smokey flavor to the fried rice. 

* Then mix it well. 

* Once it done sprinkle some water to the hot wok. This will helps the burnt soy sauce to mix with the fried rice and give a nice flavor. 

* Then add capsicum and spring onion. Mix it. 

* Turn off the flame. 

* Tasty and easy egg fried rice is ready.
