Chettinad Chicken Curry
Chettinad chicken curry is one of the most aromatic, delicious mouth-watering dish. This is South India's most popular chicken dish made using roasted whole spice. It goes well with rice and with any flat bread like roti, naan, paratha and more
INGREDIENTS :-
* Chicken - 1/2 kg
* Shallots - 1/2 cup
* Tomato - 1 small
* Green chilli - 1
* Oil - 1 tbs
* Curry leaves - 1 sprig
For Chettinad masala paste :-
* Coriander seeds - 1 tbs
* Black pepper - 1 tsp
* Fennel seeds - 1 tsp
* Cumin seeds - 1/2 tsp
* Cardamom - 4
* Cloves - 4
* Star anise - 1
* Dried red chilli - 3
* Grated coconut - 1/4 cup
* Curry leaves - 1 sprig
* Cashew nut - 4
For Marinade :-
* Lemon juice - 1tsp
* Curd - 2 tbs
* Chilli powder - 1/2 tbs
* Ginger garlic paste :- 2 tsp
* Turmeric powder - 1/4 tsp
* Salt - to taste
METHOD :-
For marination :-
* To a bowl add the cleaned chicken pieces.
* Add Ginger garlic paste, chilli powder, turmeric powder, lemon juice, curd and salt.
* Mix well and let it rest for 30 minutes.
* Heat a heavy bottom pan.
* Add the ingredients required for for chettinad masala paste one by one except grated coconut, cashew nut and curry leaves. Dry roast in medium flame until it becomes crispy. Stir it continuously to avoid burning.
* Transfer this to a plate. Let it cool down completely.
* To the same pan add 1 tsp oil.
* When it becomes hot add 1/4 cup grated coconut along with curry leaves.
* Roast them for 5-6 minutes or until light brown color in medium to low flame.
* Remove from the heat and let it cool down completely.
* To a mixer jar First add the roasted spices.
* Grind it to a fine powder. Then add the roasted coconut along with cashew nuts and grind to a fine paste by adding enough water. Chettinad masala paste is ready. Set aside.
* Heat a pan add oil.
* Then add sliced shallots and green chilli. Saute it until shallots turns golden brown color.
* Once it done add chopped tomato.
* Saute it until the oil separates.
* Then add curry leaves and chettinad masala paste.
* Saute it for 2 minutes.
* Then add the marinated chicken pieces.
* Mix it in high flame for 5 minutes.
* Add enough hot water and cook until it's cooked well.
* Turn off the flame.
* Tasty chettinad chicken curry is ready.
