Veg Manchurian

  Manchurian is one of the popular Indo-Chinese dishes in India. Veg Manchurian is made with fried vegetable balls. This pairs well with  noodles or fried rice. Here I sm making Veg Manchurian with crispy fried mixed vegetable balls in a sweet, spicy, tangy Umami Manchurian gravy.  

INGREDIENTS :-

For Manchurian balls:-

* Finely chopped Cabbage - 1 1/2 cup

* Finely chopped Carrot - 1 cup

* Finely chopped French Beans - 1/4 cup

* Spring onion green - 2 tbs

* Chopped Ginger - 1/2 tbs

 * Chopped garlic - 1/2 tbs

* Green chilli paste - 1 tsp

* soya sauce - 1/2 tsp

* Butter - 1/2 tbs

* Corn flour - 2 1/2 tbs

* All purpose flour - 1 1/2 tbs

* Pepper powder - as needed

* Salt - to taste

* Oil - for deep frying

For sauce :-

* Chopped onion - 2 tbs

* Chopped garlic - 2 tbs cup

* chopped ginger - 1/2 tbs

* Chopped green chilli - 1

* Spring onion - 2 tbs

* Chopped capsicum - 2 tbs

* Soya sauce - 1/2 tbs

* Vinegar - 1/2 tsp

* Vegetable stock water - 2 cups

* Coriander leaves - 1 tbs

* Corn flour - 1 tbs

* Oil - 1 tbs

* Pepper powder - as needed

* Salt - to taste

METHOD :-

For making Manchurian balls :-

* To a bowl add the ingredients for  vegetables for Manchurian balls 

* Mix and combine well. 

* Allow to rest for 5 minutes.

* If you feel the mixture has too much of moisture you can add little more flour. 

* Heat oil for frying. 

* Meanwhile make small balls out of the vegetable mixture. 

* When the oil becomes hot add the balls. 

* Fry until golden brown color in medium flame. Do not fry them on high heat or low heat. Set aside. 

For making sauce :-

* Heat a wok or khadai, Add oil. 

* When it becomes hot add onion, green chilli, capsicum, ginger and garlic. 

* Saute it for 1-2 minutes in high flame. 

* Then add vegetable stock water or hot water. 

* To this add soya sauce, spring onion, vinegar, pepper powder and salt. 

* Bring it to a boil. 

* Meanwhile make corn flour slurry by adding corn flour with little  water. 

* Add this corn flour slurry to the Manchurian gravy. 

* Boil this until the sauce becomes slightly thick. You can adjust the quantity of corn flour depending on how thick or thin  you want your Manchurian gravy to be. 

* Once the gravy is done add the fried Manchurian balls along with coriander leaves. 

* Turn off the flame. 

* Tasty veg Manchurian is ready.
