Kuzhi Paniyaram
Paniyaram Or kuzhi Paniyaram is a tasty savory rice dumplings made using idli Or dosa batter with tempered onion and spices. Paniyaram is a great choice to relish for breakfast, dinner or snack. This is made in a special pan called paniyaram pan. Which is similar to Aebleskiver pan, used to make Danish pancake balls. You can also use unniyappam pan to make this.
INGREDIENTS :-
* Idli batter - 2 cup
* Oil - 1+3 tbs
* Mustard seed - 1/2 tsp
* Green chilli - 2
* Ginger - 1 inch piece
* Onion - 1
* Asafoetida powder - 1/4 tsp
* Curry leaves - 1 sprig
For Idli batter :-
* Idli rice - 1 cup
* Whole Urad dal - 1/4 cup
* White Flattened rice - 1/4 cup
* Fenugreek seeds - 1/2 tsp
* Salt - to taste
METHOD :-
* Wash the rice, urad dal and fenugreek separately.
* Soak these ingredients separately for 3 hours.
* After 3 hours, refrigerate for these for another 3 hours. ( if not refrigerated, it will heat up while grinding on the mixer jar. If you are grinding on a grinder you need not refrigerate it)
* Drain out the water from the rice and fenugreek.
* Then drain the water from the urad dal and save the water from the urad dal for grinding.
* Before grinding, add the flattened rice to a bowl and add 1/2 cup of water.
* Soak this for 5 minutes.
* Then to a mixer jar first add urad dal.
* First grind it without adding water.
* Then add little by little water.(drained water from the urad dal)
* Grind this till it becomes thick, soft buttery texture.
* Transfer this to a mixing bowl.
* Then grind the rice in one or two batches by adding little by little water. ( water drained from the urad dal, need about 1 1/2 cup of water)
* Grind it to a smooth paste, yet slightly grainy.
* Transfer this to the same mixing bowl that we have added the urad dal paste.
* Then grind the soaked fenugreek seeds and soaked flattened rice.
* Grind to a smooth paste.
* Transfer this to the same mixing bowl. Then add salt.
* Mix well and combine with your hands. Batter should occupy half of the bowl otherwise it will overflow while fermentation.
* Close the lid. Do not close it tightly.
*Allow to ferment.
* Depending on the climate it will take 8 - 9 hours.
* After fermentation. Open the lid. Mix it gently. Set aside.
* For tempering, heat a pan add 1 tbs oil. When it becomes hot add mustard seeds. Wait to pops up.
* Add chopped ginger and green chilli. Saute it for 1 minute.
* Then add chopped onion. Saute it till it turns transparent.
* To this add curry leaves. Mix it.
* Turn off the flame. Add asafoetida powder. Mix it.
* Let it cool down completely.
* Add this cooled tempering to the batter. The batter should be thick. Not too thick or runny.
* Heat a Paniyaram pan Or unniyappam pan
* Add 1/2 tsp oil to each mould.
* Then pour the batter to each mould till 3/4 th of the mould because it will raise.
* Cook until golden. When one side is done flip it. Cook other side till golden.
* Remove from the heat.
* Tasty kuzhi Paniyaram is ready.
