Tomato mango curry

   Tomato mango curry is a flavourful dish that combines tomatoes, mango and a blend of spices. The combination of mangoes and tomato creates a unique and delicious flavor that is both spicy and tangy. Serve it hot for a satisfying meal. It's a perfect accompaniment to steamed rice. 

INGREDIENTS :-

* Raw mango - 1 medium

* Tomato - 2 

* Ginger - 1 inch piece

* Shallots - 5

* Turmeric powder - 1/4 tsp

* Chilli powder - 1 1/2 tsp

* Salt - to taste

* Curry leaves - 1 sprig

* Coconut oil -  1/2 tbs

* Grated coconut - 1/2 cup

For tempering :-

* Coconut oil - 1 tbs

* Fenugreek seeds - 1/4 tsp

* Shallots - 3

* Dried red chilli - 3

* Curry leaves - 1 sprig

METHOD :-

* Crush the ginger and shallots together. 

* To a khadai Or earthen pot, add mango pieces, tomato pieces, crushed ginger and shallots mix, chilli powder, turmeric powder, salt, curry leaves and 1/2 tbs coconut oil. 

* Mix it with the hands. 

* Let it rest for 30 minutes. 

* To mixer jar add grated coconut and grind to a fine paste by adding enough water. 

* Add this coconut paste to the marinated tomato mango mix. 

* Add enough water. (Gravy should be not too thin Or not too thick) 

* Cook this until it's cooked well. 

* Remove from the flame. 

* For tempering heat a pan add 1 tbs oil. 

* When it becomes hot add the fenugreek seeds. Wait to pops up. 

* Then add sliced shallots. Saute it until it becomes golden brown color. 

* Once it done add dried red chilli and curry leaves. 

* Saute it for 15 seconds. 

* Turn off the flame and suddenly pour this to the tomato mango curry. 

* Close it for 2-3 minutes. 

* Tasty tomato mango curry is ready.
