Varutharacha Beef curry / Beef in roasted coconut gravy

      Some recipes are great with its traditional touch of cooking. This Varutharacha beef curry or Beef curry in roasted coconut gravy is that kind of curry and it tastes delicious. The aroma of roasted coconut makes this beef curry an aromatic and flavourful dish. 

INGREDIENTS :-

* Beef - 1 kg

For marination :-

* Onion - 1 big

* Garlic - 7 cloves

* Green chilli - 2

* Chilli powder - 1 tbs

* Turmeric powder - 1/2 tsp

* Coconut oil - 1 tbs

* Salt - to taste

* Curry leaves - 2 sprigs

For Masala :-

* Shallots - 15

* Ginger garlic paste - 2 tbs

* Tomato - 1

* Coriander powder - 2 tbs

* Garam masala powder - 1 tsp

* Pepper powder - 1 1/2 tsp

* Coconut oil - 2 tbs

* Coriander leaves - 1 handful

For roasting coconut :-

* Fennel seeds - 1 tsp

* Dessicated coconut or fresh grated coconut - 3 tbs

* Chilli powder - 1/2 tsp

* Coconut oil - 1 tsp

METHOD :-

* To the cleaned beef pieces add sliced onion, chilli powder, chopped garlic, chopped green chilli, turmeric powder, salt, coconut oil and curry leaves. 

* Mix it well and let it rest for 30 minutes. 

* For roasting coconut, heat a pan add 1 tsp oil. When it becomes hot add fennel seeds. 

* Then add dessicated coconut or fresh grated coconut. 

* Roast it in medium to low flame until golden brown color. 

* Once it done add 1/2 tsp  chilli powder. 

* Saute it for 30 seconds. 

* Turn off the flame. 

* Let it cool down completely. 

 * After that transfer this to a mixer jar. 

* Grind it to a fine paste by adding enough water. Set aside. 

* For masala, Heat a pressure cooker add 2 tbs of oil. 

* Then add sliced shallots. Saute it till it turns golden brown color. 

* Once it done add ginger garlic paste. Saute it till the raw taste is gone. After that add 2 tbs of coriander powder. Saute it for 30 seconds. 

 * To this add chopped tomato. Saute till the oil separates. 

* Then add marinated beef pieces. 

* Mix it for 5 minutes in high flame. 

* Then a add grinded roasted coconut. 

* Mix it. 

* Add 1/2 cup of water. Let it vigorously boil. 

* Close it and cook until the beef is cooked well. 

* Turn off the flame. 

* Let the pressure completely settled. 

* After that open it and finally add garam masala powder, pepper powder, 1 tsp coconut oil and coriander leaves. 

* Mix it. 

* Tasty varutharacha beef curry is ready.
