Malabar Kai pola / Banana and egg cake
Kai pola is one of the most authentic and popular dish of Malabar cuisine. Use only ripe nendrapazham Or ethapazham to make this dish. This tasty and flavorful dish makes a perfect sweet for Iftar Or any occasion.
INGREDIENTS :-
* Ripe banana (Nendrapazham) - 2
* Egg - 2
* Sugar - 3 tbs
* Milk - 2 tbs
* Salt - a pinch
* Cardamom powder - 1/4 tsp
* Ghee - 3 tbs
* Raisin and cashew nut - 8-10
METHOD :-
* Chop the ripe banana into cubes.
* Heat a pan add 1 tbs ghee. Fry raisins and cashew nut till brown color. Set aside.
* To the same pan add 1 tbs ghee. Add banana pieces and 1 tbs sugar into this.
* Fry till light brown color.
* Let it cool down completely.
* To a blender crack open the eggs along with remaining sugar, salt, milk and cardamom powder.
* Blend it nicely.
* To this add fried banana. Mix it.
* Heat a flat bottom tawa. When it becomes medium hot.
* Then place a small pan or sauce pan over it.
* Add 1 tbs ghee. Pour the banana mixture into it.
* Add the fried cashew nut and raisins on the top.
* Close it.
* Cook this for 30 minutes in low flame.
* Insert a tooth pick to check if it's done.
* Then flip the other side it to an another pan. Cook the top portion for 2 minutes in low flame.
* Turn off the flame.
* Tasty Kai pola is ready to serve.
