Egg Pan Roll
These are perfectly sized, quick and easy pan rolls. Filled with egg and potato mix. These are a great satisfying mouthful of snacky goodness.
INGREDIENTS :-
For filling :-
* Egg - 2
* Potato - 1
* Onion - 2
* Tomato Sauce - 2 tbs
* Chilli sauce - 1 tbs
* Chilli powder - 1 tsp
* Coriander powder - 1/ 2 tsp
* Turmeric powder - 1/4 tsp
* Garam masala - 1 tsp
* Salt - to taste
* Coriander leaves - 2 tbs
* Oil -2 tbs + For frying
For batter :-
* All purpose flour - 1 cup
* Corn flour - 2 tbs
* Salt - to taste
* Water - 1 cup + 3 tbs
For coating :-
* Bread crumbs - 1/2 cup
* Egg - 1
METHOD :-
* Cook the potato.
* Peel it and cut into small cubes. Set aside.
* Heat a pan then add 2 tbs oil.
* When it becomes hot add chopped onion.
* Saute it till it turns light brown color.
* Lower the flame. Then add chilli powder, coriander powder, turmeric powder, garam masala powder and salt.
* Mix it and add 1/4 cup water.
*Let it boil for minute. To this add cooked potato cubes.
* Mix it until it's combined well. Then add tomato sauce and chilli sauce. Mix it.
* To this crack the eggs.
* Add chopped coriander leaves.Do not stir it. Then close it for 1 minute in medium flame.
* Then gently scramble the eggs.
* Saute it until the water is completely reduced.
* Turn off the flame. Filling is ready. Set aside.
* To a bowl add all purpose flour, corn flour and salt. Mix it.
* Add water to this. Make a loose batter.
* Sieve it for a lump free batter.
* Heat a tawa, pour one ladle of batter. Spread in circular motion and make a dosa shape out of this.
* cook this by flipping both sides.
* Remove from the flame.
* Put some filling on side. Then roll it.
* Dip it in the egg. Then roll it in the bread crumbs.
* Repeat the same process for all rolls.
* Heat oil for frying. When it becomes hot. Turn the flame to medium.
* Add the rolls to the oil.
*Deep Fry it till it turns golden brown color.
* Tasty egg pan rolls is ready to serve.
