Egg Appam
Egg appam is a delicious appam recipe, made by dropping an egg in the center of the appam. Serve as a breakfast along with masala curry for a hearty meal.
INGREDIENTS :-
For appam :-
* Raw rice - 1 cup
* Grated coconut - 1/2 cup
* Steamed rice - 1/4 cup
* Coconut water - 1/2 cup
* Instant yeast - 1/4 tsp
* Baking soda - 1/4 tsp
* Sugar - 1 tbs
* Salt - as needed
* Water - as needed
For Egg appam :-
* Egg - 8
* Pepper powder - as needed
* Salt - to taste
METHOD :-
* Wash and soak the rice for 5-6 hours.
* After that drain out the water.
* Transfer this to a mixer jar along with grated coconut, steamed rice, sugar, yeast and coconut water.
*Grind it by adding enough water. (Grinded paste should be not be fine paste just before that, when we rub the batter with two fingers we feel small grains)
* Add this to a big bowl. Correct the consistency, it should be little thinner than dosa batter.
* Let it ferment for 8 hours.
* Just before making appam, add salt and baking soda. Mix well.
* Then heat an appam pan or a seasoned khadai / woke with handles.
* Pour one ladle of batter to the appam pan, immediately turn and tilt the pan in circular motion so that the batter will spread in round shape.
* Crack open one egg on the middle of appam. Gently tilt the pan in circular motion.
* Sprinkle some pepper powder and salt.
* Further cover and turn the flame medium to low until the edges turns golden brown and egg is soft and cooked.
* After that take out from the pan.
* Follow the same procedure till the batter finished.
*Egg appam is ready to serve.
