Mishti Doi

   Mishti doi is a traditional Bengali sweet prepared from thick milk which converted to thick sweet yogurt. A popular Bengali Cuisine fermented dessert recipe is  mainly prepared from full fat milk, jaggery or sugar and hung curd. Adding milk powder will enhance the taste. Enjoy chilled!!! 

INGREDIENTS :-

* Full fat milk - 1 ltr

* Milk powder - 200 gm

* Organic Powdered jaggery - 200 gm

* Water - 3 tbs

* Hung curd - 2 + 2 tsp

* Cardamom powder - 1/4 tsp

* Dried rose petals - 10 petals

METHOD :-

* Boil the milk along with milk powder until it reduced to half in medium to low flame. Stir it continuously. 

* When it becomes half the volume. Remove from the flame. Scrape the dried milk solids from the sides and add to the milk. Set aside. 

* Then heat a pan add 3 tbs of water followed by jaggery powder. 

* Boil till it melts completely. 

* Strain the jaggery syrup. 

* Add this jaggery syrup to the milk. Don't add jaggery syrup to the hot milk. Milk should only be 70 percentage hot, otherwise it's a chance to curdle. 

* Mix it. 

* Let it rest for 5 minutes or when  the milk should be warm, it means if you dip your finger in the milk, your finger should feel comfortably warm but not hot. 

* At this time add 2 tsp hung curd to this and mix well. 

* To this add cardamom powder and rose petals. 

* Take an earthen pot. Spread a thin layer of curd on inside of the pot. 

* Then pour the milk mixture to this. Close it with a lid. 

* Let it rest for 8-9  hours or till it becomes completely set. ( The time may vary according to the climate). 

* After that refrigerate for another 2 hours. 

* Tasty chilled Mishti doi is ready.
