Easy Buttered Cassava
Butter cassava requires only few ingredients and minimal effort. Butter, coconut milk and seasonings elevate the natural taste of cassava. Grilled meats and seafoods stands deliciously on its own. Some people like mushy butter cassava, but some people like something with some more structure and bite. No matter that's your preference.
INGREDIENTS :-
* Tapioca - 1/2 kg
* Butter - 2 tbs
* Green chilli - 1
* Pepper powder - 1/2 tsp
* Thick coconut milk - 1/2 cup
* Onion - 1/2
* Oil - 1 tbs
* Curry leaves - 1 sprig
* Salt - to taste
METHOD :-
* Peel and wash the tapioca.
* Cut into medium pieces. Remove the vein from the middle of the tapioca.
* Boil some water. Bring beater to a rolling boil in a large pot.
* Add cassava to this.
* Then cook for 15 minutes. At this stage add salt.
* Again cook for 10 minutes or until it becomes tender.
* After that drain water from cassava.
* Heat a pan add butter then add drained cassava.
* Saute this for 5 minutes in low flame.
* Mash it gently.
* Then add coconut milk and pepper powder.
* Mix well and cook for 2-3 minutes.
* Turn off the flame.
* For seasoning, heat another pan.
* Add oil when it becomes hot add chopped onion and chopped green chilli.
* Saute it until the onion becomes light brown color.
* After that add curry leaves.
* Turn off the flame.
* Add this seasoning to the mashed cassava.
* Mix well.
* Tasty butter cassava is ready to serve.
