Aviyal is one of the well known  recipe in kerala sadhya. No sadhya  will complete without the aviyal.  vegetables mixed with coconut and curd, seasoned with fresh coconut oil and curry leaves makes the dish more flavourful and delicious. This is one of the favourite recipe of most of the keralites.

 

INGREDIENTS :-

* Ash gourd - 1/2 cup

* Elephant yam - 1 cup

Raw plantain - 1 cup

* Carrot - 1/2 cup

* Cowpea beans - 1/2 cup

* Drumstick - 1/2 cup

* Grated coconut - 1 cup

* Cumin seeds - 1/2 tsp

* Green chilli - 5-6

* Thick curd - 1/2 cup

* Curry leaves - 2 sprig

* Coconut oil - 2 tbs

* Salt - to taste

METHOD :-

* Clean the vegetables then peel and cut them into medium long sticks or batons. The vegetables need to be cut like a slightly thick potato French fries. 

* Beat the curd and set aside. 

* Mix all the vegetables along with coconut oil, 1/4 cup water and salt. 

* Cook this until it's cooked well.  (Don't Overcook the vegetables ) 

* After that turn off the flame. Set aside. 

* To a mixer jar add grated coconut, cumin seeds and green chilli. 

* Coarsely grind it without adding water. 

* To the cooked vegetables add the coarsely grinded coconut mix. 

* Mix well. 

 * Cook until the raw taste of coconut is completely gone. 

* Add the Beated  curd to this. 

* Mix well. 

* Turn off the flame. 

* Then add fresh coconut oil and curry leaves. Mix it. 

* Close the lid and let it rest for 5 minutes. 

* Tasty and healthy avial is ready.
