Kathal Biriyani / Jackfruit Biriyani

 Jackfruit biriyani also known as kathal biriyani. Here i am sharing an easy Kathal biriyani  an amazing one pot meal for vegetarians. Indulge in the rich and aromatic goodness of pressure cooker biriyani- a delightful twist on the classic dish. 

INGREDIENTS :-

* Tender jackfruit - 1/2 kg

* Basmati rice - 1 1/2 cup

* Onion - 2

* Tomato - 1 big

* Ginger- garlic paste - 2 tbs

* Green chilli - 2

* Shah jeera - 1/2 tsp

* Chilli powder - 1 1/2 tsp

* Coriander powder - 1 tsp

* Garam masala - 1 1/2 tsp

* Curd - 1/2 cup

* Coriander leaves - 1/4 cup

* Mint leaves - 10

* Ghee - 5-6 tbs

* Salt - to taste

METHOD :-

* Take the tender jackfruit. 

* Peel and cut into 2 inch pieces. Slightly remove the middle portion. 

* Soak the basmati rice for 30 minutes. Then drain out the water and set aside. 

* Heat a pressure cooker, add ghee. 

* Slide the jackfruit pieces and shallow fry it till  golden brown color. Remove from the flame and Set aside. 

* To the same ghee add shah jeera and sliced onions. Saute till onion turns golden brown color. Add extra ghee if needed. 

* To this add ginger garlic paste and chopped green chilli. 

* Saute till the raw tastes gone. 

* After that add coriander powder and chilli powder. Mix well. 

* Once it done add tomato pieces and salt. 

* Cook on medium flame till the tomatoes turns soft and pulpy. 

* Then add coriander leaves, mint leaves, garam masala and curd. Mix well. 

* Add fried jackfruit pieces to this and cook on medium heat for 5 minutes. 

* Then add 2 1/4 cup hot water. 

* When it starts bubbling, add soaked and drained rice to this. 

*  Turn the flame high. When it starts bubbling, allow to cook for 3 minutes in high flame. 

* After 3 minutes close the kid without whistle. 

* Turn the flame low and allow to cook for  another 12 minutes. 

* After that turn off the flame. 

* Let it rest for 10 minutes. 

* Open it and garnish with some coriander leaves and ghee. 

* Tasty and easy kathal biriyani is ready to serve.
