Mixed veg kurma Kerala style / Traditional Kerala recipe
VEG - KURMA
Today I'm sharing the recipe of a South Indian delicious veg kurma. It works well with pathiri, parotta, idiyappam, dosa, idly.....
Ingredients adding will be changed upon the region. In certain places they add nuts and yogurt that depends. Here I am telling you kerala style basic and simple kurma. The smell and the taste is truly wonderful. We can make this for our morning meal or for dinner. It takes just a few minutes.
I prepared this veg kurma with coconut paste. So we should see how to make Kerala style veg kurma.
INGREDIENTS:-
* Potato - 2 medium sized
* Carrot - 1 big
* Beans - 5 - 6
* Onion - 1 big
* Tomato - 1 big
* Ginger- garlic paste - 1 1/2 Tsp
* Green chilly - 1
* Chilly powder - 1 Tsp
* Coriander powder - 2 Tsp
* Turmeric powder - 1/4 Tsp
* Garam masala powder - 1/2 Tsp
* Grated coconut - 5 Tbsp
* Fennel seeds - 1 Tsp
* Salt - to taste
* Oil - 2 Tbsn
* Coriander leaves - 1 Tbsp
METHOD :-
* Put a pressure cooker on the stove, add oil. When it becomes hot add fennel seeds 1/4 Tsp and onion.
* Saute it till light brown colour.
* Add ginger - garlic paste again saute it till the raw taste is completely gone.
* Add chilly powder, turmeric powder, coriander powder and salt.
* Then add chopped Tomato, saute it till the oil separates. Add cut vegetables and mix well for 2 minutes.
* Add enough water then close the lid and cook for 2 whistles.
* Put a mixer jar add grated coconut and 3/4 Tsp fennel seeds. Grind it to a fine paste.
* Add this coconut paste and garam masala powder to the vegetable mix. Let it boil. Add a pinch of sugar. (only if you like, it enhance the taste of the kurma).
* Finely add coriander leaves. Then turn off the flame.
* Tasty kerala style veg kurma is ready to serve.
