Easy lunch recipes / pumpkin curry and cluster beans stir fry

 

  Pumpkin curry and cluster beans upperi or stir fry is a simple and delicious lunch recipes. Goes well with rice. Pumpkin curry is a gravy type with tangy taste and cluster beans upperi is a dry dish. Both are from Kerala Cuisine. When we are in a hurry, we can try this recipe. It takes only 20 - 30 minutes for preparing both recipes.

Pumpkin curry / easy lunch recipes


FOR PUMPKIN CURRY:-

* Pumpkin - 1 cup

* Tomato - 1

* Chilly powder - 1 Tsp

* Sambar powder - 1 Tsp

* Turmeric powder - 1/2 Tsp

* Salt - to taste

* Tamarind -  gooseberry sized

* Grated coconut - 3 Tbsp

* Asafoetida powder - 1/2 Tsp

* Jaggery powder - 1/2 Tsp

* Oil - 1 Tbsp

* Mustard seeds - 1/2 Tsp

* Curry leaves - 1 sprig

* Dried chilly - 2


METHOD :-

* Put a khadai or earthen pot on the stove, add pumpkin pieces, salt, turmeric powder along with enough water to cook well.

*When the pumpkin is cooked well, add sambar powder, chilly powder and tomato pieces.

* Let it boil for 2 minutes. Add tamarind paste.

* Boil till the raw taste of tamarind is completely gone. 

* Put a mixer jar add grated coconut, grind this to a fine paste by adding enough water.

* Add this to the pumpkin mix. Boil for 2 minutes.

* Turn off the flame and add jaggery and mix well.

* Put a pan on the stove add oil when it becomes hot add Mustard seeds when it pops up add dried chilly and curry leaves

* Turn off the flame, add this to the curry along with asafoetida powder.close the lid for 2 minutes.

*Tasty pumpkin curry is ready to serve.



FOR CLUSTER BEANS UPPERI :-

* Cluster beans - 250 gm

* Shallots - 13

* Garlic - 3

* Turmeric powder - 1/2 Tsp

* Chilly powder - 1 1/2 Tsp

* Oil - 1 1/2 Tbsn

* Mustard seeds - 1/2 Tsp

* Dried chilly - 1

* Curry leaves - 1 sprig


METHOD :-

* Clean the cluster beans and cut into medium sized pieces like this.

* Just boil the cluster beans pieces, then strain it.

* Put this to the pressure cooker, add salt and turmeric powder.

* Cook for 2 whistles.

* Put a pan on the stove add oil when it becomes hot add Mustard seeds when it pops up add dried chilly, garlic pieces and shallots pieces.

* Saute it till it becomes golden brown colour. 

* Turn the flame low then add chilly powder and curry leaves.

* To this add cooked cluster beans and mix well.

* Turn off the flame.

* Tasty cluster beans upperi is ready to serve.
