Brinjal Kosumalli / brinjal chutney

  Brinjal Kosumalli or brinjal chutney is a Tamil Chettinad style recipe. Made using brinjal and potato. best side dish for dosa and idli. The ingredients may differ from region to region that depends on the taste.. Some people add garlic. Some people make this recipe without potato. This is a quick recipe. Can be prepared in few minutes.

INGREDIENTS :-

* Brinjal - 3

* Potato - 1

* Tomato - 2

* Onion - 1

* Green chilly - 6

* Turmeric powder - 1/4 Tsp

* Asafoetida powder - 1/2 Tsp

* Salt -  to taste

* Oil - 2 Tbsn

* Mustard seeds - 1/2 Tsp

* Urad dal - 1 Tsp

* Curry leaves - 1 sprig

* Coriander leaves - 3 Tbsp


METHOD :-

* Put a pressure cooker on the stove add oil when it becomes hot add Mustard seeds when it pops up add chopped onion.

* Saute it till it becomes transparent.

* Then add green chilly, tomato pieces, potato pieces, turmeric powder, curry leaves and salt.

* Add 1 cup of water when it starts bubbling. Close the lid.

* Cook for 3 whistles.

* When the pressure is completely gone open the lid.

* Mash it.

* Then add asafoetida powder, let it boil for 1 minute.

* Turn off the flame. 

* Finely add coriander leaves.

* Tasty kosumalli is ready to serve.
