Ari payasam / Rice payasam
During onam people makes various sorts of payasam. Here I am posting the recipe of ari payasam. This is a customary kerala recipe. This is usually made with broken matta rice or podi ari. Certain individuals made this ari payasam without coconut milk. However, here I am making this payasam with coconut milk. Temple style ari payasam is made without coconut milk. Ghee, jaggery , cardamom powder makes this payasam more flavourful and delicious.

INGREDIENTS :-
* Broken matta rice - 3 Tbsp
* Jaggery - 200 gm
* Coconut milk - (2nd milk) 3 cup
( 1st milk) 1 cup
* Ghee - 2 Tbsn
* Cardamom powder - 1/2 Tsp
* Condensed milk - 1 Tbsp
* Cashew nuts - 10
METHOD:-
* Wash the rice.
* Pressure cook the rice by adding 2 cups of water for 5 whistles.
* When the pressure is completely gone open the lid.
* Filter the jaggery syrup and add this to the boiled rice. ( No need of any consistency for jaggery syrup)
* Boil in medium flame for 10 to 15 minutes until it becomes little thick.
* At this time add 1 Tbsp ghee mix it well.
* Then add 2nd coconut milk. Stir it continuously for 10 minutes in medium flame.
* Add 1st coconut milk. When it starts bubbling switch off the flame.
* Add condensed milk, 1 Tbsp ghee , roasted cashew nuts and cardamom powder. Mix it well.
* Tasty and flavourful ari payasam is ready to serve.
