Palakkad style varutharacha sambar

 

     VARUTHARACHA SAMBAR

 

 An aromatic and delicious sambar cooked with roasted coconut and spices that makes the perfect partner for boiled rice.

  Subsequently varutharacha sambar taste not quite the same as the ordinary assortment of sambar, which is made with sambar powder.


Palakkad style Varutharacha sambar




INGREDIENTS:-

* Toor dal - 3/4 cup

* water -  2 1/2 cup

* Turmeric powder - 1/2 Tsp

* Shallots - 4 + 10

* cury leaves - 1  sprigs

* Vegetables - of your choose

* Tomato - 2 medium

* Tamarind - lemon sized

* Jaggery - 1Tbsp


FOR ROASTING:-

* Grated coconut - 5-6 Tbsp

* Coriander seeds - 1 1/2 Tbsp

* Dried red chilly - 6-7

* Urad dal - 1/2 Tbsp

* chana dal - 1/2 Tbsp

* Fenugreek seeds - 1/4 Tsp

* peppercorn - 1Tsp

*  Asafoetida - 1Tsp

* curry leaves - 1 sprigs

* kashmiri chilly - 4

* salt - to taste


 FOR SEASONING:-

* Cocunut oil - 1 Tbsp

* Dry red chilly - 2

* Mustard seeds - 1/2Tsp

* Fenugreek seeds - 6

* Fennel seeds - 1/4Tspn

* Curry leaves - 1 sprigs

PREPARATION:-

* Pressure cook the dal by adding 1/2tsp turmeric and 2 1/2cups water, along with 4 shallots, curry leaves, cocunut oil

* Cook for 3- 4 whistles. Untill the dal is well cooked.

* Open the cooker, when the pressure settles down.

* Add the vegetables, 10 shallots and enough salt.

* Boil for 2minutes.

* Add tamarind juice and tomato to the vegetable mix

* Fill the water to half portion of cooker.

* Cook for 4-5minutes.

* Make sure the vegetables are perfectly cooked.

* Then add 1tbsp jaggery for extra taste.

* Roast the grated coconut till golden brown colour.

* Mean while roast coriander seeds, chana dal, peppercorns, fenugreek, dry red chilly, kashmiri chilly, Urad dal, curry leaves,with little oil.

* Now mix all the roasted ingredients and allow to cool.

* Now by adding enough water grind this to a fine paste.

* Add this fine paste to the vegetable mix, add enough water and mix well.

* Cook in medium  flame to reach the correct consistency.

* Finely add chopped coriander leaves.

*  Heat a pan add coconut oil, mustard seeds, after the mustard pops add fenugreek, fennel seeds, dry chilly, curry leaves and asafoetida powder.

* Add this seasoning.

Kerala style varutharacha sambar

* Close the cooker for few minutes.

* Varutharacha sambar is ready, serve with rice.
