Koottu curry / Kerala sadhya recipe

 

 Koottu curry is one of the famous kerala sadya recipe. It's a semi sweet dry dish made with chana dal, ash guard, elephant yam, roasted coconut... Some of them use chickpea instead of chana dal. Roasted coconut with pepper and jaggery will make this a delightful treat. This is usually serve with boiled rice and sambar along with inji puli would be an ideal backup  for this curry. The vegetable used in the koottu curry may vary, some of them use raw banana and elephant yam.

INGREDIENTS:-

* Chana dal - 1/2 cup

* Ash guard - 1/4 cup

* Elephant yam - 1/2  cup

* Chilly powder - 1/2  Tsp

* Turmeric - 1/4 Tsp

* Jaggery - 1/2 Tbsn

* Pepper powder - 1 1/2 Tsp

* Grated coconut for grinding - 4Tbsp

* Cumin seeds - 1/2 Tsp

* Salt - to taste

For seasoning :-

* Coconut oil - 2 Tbspn

* Urad dal - 1/2 Tsp

* Mustard seeds - 1/2 Tsp

* Dry red chilly - 3 

* Curry leaves - 2 springs

* Grated coconut - 8 Tbsp


PREPARATION :-

* Soak chana dal for half an hour.

* Pressure cook this chana dal, elephant yam, turmeric, chilly powder and salt in medium flame for 1 whistle.

*  Then add Ash guard to the pressure cooker again cook for 1 whistle.

* When the pressure is completely settled down, open the cooker and keep aside.

* Now grind the grated coconut along with cumin seeds to a coarse paste.

* Add this paste to the cooked vegetables- chana dal mix and allow to boil in low flame.

* Then add crushed jaggery and boil for 1 minute.

* Now remove from the flame and keep aside.

* Heat oil in a pan add Mustard seeds, when it pops up add urad dal, dry red chilly and curry leaves.

* Add this seasoning to the curry.

* Again put a Pan add 2 Tsp of oil and grated coconut roast in medium flame till the colour of the coconut changes to brown colour.

* Finally add pepper powder to this roasted coconut fry for few more seconds.

* Add this roasted coconut to the curry and mix well.

* Koottu curry is ready to serve.
