Here i am telling about sambar powder recipe. Delicious aromatic sambar presented with hot fluffy idli. The creative mind makes me heavenly. So why don't we prepare sambar with homemade sambar powder. This homemade sambar powder is more aromatic and more delicious and also more hygienic than the store bought sambar powder.
In kerala sadhya recipes, sambar assumes a significant part. Generally there are various varieties in sambar like Varutharacha sambar, pumkin sambar, onion sambar etc.. Same sambar powder is used to make all this sambar ,the difference is depends on the vegetables we are using. I have already uploaded Varutharacha sambar and pumkin sambar.
My mom make this homemade Sambar Powder with Kashmiri chilly that gives extra colour to the sambar.
Let's see how to make aromatic homemade Sambar Powder.
INGREDIENTS :-
* Coriander seeds - 1 cup
* Chana dal - 1/2 cup
* Peas dal (Vada paruppu) - 1/4 cup
* Urad dal - 1/4 cup
* Boiled rice - 1 Tbsp
* Pepper - 1 1/2 Tbsn
* Cumin seeds - 1 1/2 Tbsn
* Fenugreek - 2Tbsp
* Dry red chilly - 40
* Kashmiri chilly - 20
* Asafoetida powder - 1 1/2Tbsp
* Curry leaves - 7 sprigs
METHOD :-
* Heat a pan, add all the ingredients one by one.
* On low flame, stirring often until they becomes fragrant and change the colour.
* It may takes roughly 1-2 minutes to roast these spices on low heat. Till they turns aromatic. Do not roast them too much.
* when it becomes light brown colour remove them from the flame and add this to a large plate or tray.
* Add the cooled spices in to a mixer grinder, also add 1 Tsp turmeric powder. Depending on the size of the jar we have to grind the spices in batches.
* Grind these spices to a fine powder.
* Due to grinding the powder becomes warm. So remove these to a plate or a bowl.
* After that sieve this to get fine powder.
* When it becomes cool transfer the Sambar Powder to a air tight jar. We can store this for 3 months in room temperature.
* Homemade sambar powder is ready to use.
