COLOCASIA ( CHEMBU ) CURRY

   Colocasia  is also known as Taro root contains good carbohydrates and an excellent source of dietary fibre.which is good for your digestive system and can contribute to healthy weight loss. It helps to improve the immune system because it contains vitamin c, vitamin B6, and vitamin E. It also helps to eliminate free radicals. It offers a variety of potential health benefits, including improved blood sugar management and heart health.

   Taro root contains polyphenols and antioxidants that may fight against cancer growth and protect your body from oxidative pressure.

  Colocasia is a starchy root vegetable cultivated in Asia it is brown skin with white pulp. This is used for making different types of foods.


Colocasia curry


 Let's make a colocasia curry with dal and coconut.

INGREDIENTS:-

* Colocasia - 1 big

* Toor dal - 1 hand full

* Turmeric - 1/4 Tsp

* Chilly powder - 1 1/2 Tsp

* Tomato - 1 medium

* Tamarind - 1 small gooseberry sized

* Grated coconut - 4 tbsp

* Cumin seeds - 1/4  Tsp

* Shallots - 4

FOR SEASONING:-

* Oil - 1 Tbsp

* Mustard - 1/2 Tsp

* Fenugreek seeds - 1 pinch

* Garlic - 2 cloves

* Dried red chilly - 2

* Curry leaves - 1 spring


PREPARATION:-

* Pressure cook the dal along with turmeric and 1 cup of water, until the dal is cooked well. And mash it.

* Add the colocasia pieces, Tomato pieces and salt to this dal mix.

* Cook for 5 minutes.

* When it is perfectly cooked, add tamarind paste and some water. Cook until the raw taste of tamarind goes.

* Grind the coconut along with cumin seeds and shallots to a fine paste.

* Add this coconut paste to the colocasia-dal mix.

* Cook for 3-4 minutes in medium flame.

* Switch off the flame.

* Put a Pan on the stove, add the oil when it's warms up add Mustard and Fenugreek seeds, when it's pops add garlic pieces and roast it till light brown colour, then add dry chilly and curry leaves.

* Add this seasoning to the colocasia curry.

* Close the lid for 2 minutes.

* Colocasia curry is ready, serve with boiled rice or roti.
