IRU PULI
Iru puli is prepared using both butter milk and tamarind. In this gravy sourness coming from two sources, hence it is called as iru puli. This goes well with roasted potatoes, or any other roasted vegetables with rice. In this iru puli we can add vegetables of our choice like taro root, raw banana , carrot etc... , i am adding Ash guard and Elephant yam.
Ash guard is good for health. It contains rich source dietary fibre. It also has a significant amount of vitamin C and E. Which improve skin and hair health.
Elephant yam is a rich source of potassium, magnesium, selenium, zinc, phosphorus and calcium that will improve concentration and memory power.
INGREDIENTS:-
* Ash guard - 1/2 cup
* Elephant yam - 1/2 cup
* Tamarind - 1 gooseberry sized
* Butter milk - 1/2 cup
* Turmeric powder - 1/4 Tsp
* Salt - to taste
FOR GRINDING :-
* Grated coconut - 4 Tbsp
* Fenugreek seeds - 1/4 Tsp
* Dried red chilly - 7
* Steamed rice - 1 Tbsp
FOR SEASONING :-
* Mustard - 1/4 Tsp
* Dried red chilly - 2
* Curry leaves - 1 spring
PREPARATION :-
* Soak the tamarind in water and extract the juice and keep it aside.
* Mean while soak the steamed rice in water for 30 minutes.
* Dry roast the red chilly and Fenugreek seeds. Roast till the Fenugreek seeds turns light brown colour.
* Remove from the flame. Let it cool down.
* Add this fried red chilly and Fenugreek seeds to the mixer grinder along with grated coconut and soaked rice.
* Grind to a fine paste.
* Cook the vegetables, First cook the elephant yam, because it takes long time to cook, when it almost cooked, then add Ash guard, salt and turmeric powder.
* When it is perfectly cooked, add tamarind paste with sufficient water, allow to boil till the raw taste of tamarind goes.
* Then add coconut paste.
* Boil for 2 minutes.
* After that add butter milk and mix well, when it starts boil remove from the flame. ( do not allow to boil)
* Heat some oil and add Mustard seeds, when it pops out add dry chilly and curry leaves.
* Add this seasoning to the curry.
* Mouth watering iru puli curry is ready.
* Serve with boiled rice.
