FISH CURRY WITH COCONUT
Here I am sharing a coconut grinded fish curry. It is extremely simple and tasty as well. Typically earthen pot is used to make these kinds of curries , on the grounds that it will improve the flavour of the curries. This is a kerala style meen curry. In this i am using homemade chilly paste instead of using chilly powder, that gives colour and perfect consistency to the meen curry.It goes well with boiled Kappa ( tapioca ) or rice.
INGREDIENTS:-
* Fish - 1/2 kg
* Onion - 1 small
* Ginger - 1 Tsp (finely chopped)
* Garlic - 1 1/2 Tsp ( finely chopped )
* Green chilly- 2
* Dried red chilly paste - 1 Tbspn
* Coriander powder - 1/2 Tbsn
* Turmeric - 1/4 Tsp
* Tomato - 1 Big
* Malabar tamarind ( kudam puli)- 4
* Funugreek seeds - 1 pinch
* Grated coconut - 4 Tbsp
* Fennel seeds - 1/4 Tsp
* Oil - 2 Tbsn
* Salt - to taste
* Curry leaves - 2 spring
For chilly paste:-
* In a bowl add boiled water and red chilly . Cover the bowl and let it cool for some time.
* Grind to a fine paste.
PREPARATION:-
* Heat a earthen pot or pan, add oil when it warms up add Fenugreek seeds.
* Add ginger, garlic, green chilly and curry leaves, roast it .
* After that add onion, roast until light brown colour.
* Then add red chilly paste, coriander powder, turmeric, saute it for 1 minute.
* Add tomato paste to this and saute it till the oil appears.
* Add kudam puli and salt along with some water. Allow to boil for 5 minutes.
* Grind the coconut along with fennel seeds to a fine paste.
* Add this coconut paste and fish to the kudam puli mix and boil till the fish is perfectly cooked.
* Switch off the flame.
* Add little coconut oil and some curry leaves to the meen curry, then cover it and rest for 2 minutes.
* Serve with boiled rice or Kappa.
