Lemon sevai
Lemon sevai is a simple and delicious breakfast. Rice sevai is covered with tempering make it tasty. Lemon sevai is a well known south indian recipe. For lemon sevai we need to set up the idiyappam batter should be little more thicker than the usual one. Though the time and exertion for making this sevai is more than Idiyappam, still the flavour of sevai merits the work.This can also be prepare with instant sevai. This recipe is ideal to pack and take along while travelling. It is similar to the lemon rice.
INGREDIENTS :-
* Crushed Idiyappam - 2 cup
* Chopped ginger - 1 Tsp
* Finely chopped Green chilly - 2
* Lemon juice - 1 Tbsp ( adjust to taste)
* Oil - 1 Tbsp
* Roasted Peanut - 1/4 cup
* Turmeric powder - 1/4 Tsp
* Asafoetida powder - 1 pinch
* Curry leaves - 1 spring
* Sugar - 1 pinch
* Salt - to taste
METHOD :-
* Prepare the idiyappam. Let it cool down completely.
* When it cools down, cut into small pieces.
* Put a pan on the stove, add oil when it becomes hot add chopped ginger, green chilly then saute it for 1 minute.
* After that add curry leaves, turmeric powder, asafoetida powder and peanut saute it for 30 seconds. Then switch off the flame.
* Let it cool down, add lemon juice, salt and a pinch of sugar, mixed well.
* Then add crushed Idiyappam and mixed well. Adjust the lemon juice if required.
* Serve with coconut chutney.
