PRAWNS GHEE DRY ROAST
Prawns roasted in a spicy masala and flavoured with ghee. Excellent side dish for rice. This recipe is made without onion and tomato. This is undoubtedly one of my favourite recipe. It tastes really delicious and quite spicy.
INGREDIENTS:-
* Prawns - 500gm
* Ghee - 5 Tbs
* Coriander seeds - 2 Tbsn
* Cumin seeds - 1/2 Tsp
* Fennel seeds - 1 Tsp
* Black pepper corns - 1 1/2 Tsp
* Fenugreek seeds - 1/4 Tsp
For masala paste :-
* Kashmiri red chilly - 10 - 12
* Jaggery - 1/4 Tsp
* Tamarind paste - 1 Tbsp
* Garlic cloves - 8 - 10 nos
* Coconut milk - 2 - 3 Tbsp ( for grinding the paste)
* Salt - to taste
PREPARATION:-
* Add de-veined prawns in to a bowl, add salt, turmeric,1/2 Tsp of chilly powder.
* Set a pan on low flame and heat it well , further add 2 Tbsn of ghee.
* Let it heat nicely.
* Add marinated prawns into the pan. Cook the prawns nicely from both sides. Make sure that don't over cook the prawns or else they will turn chewy.
* When it cooked well, keep aside.
* For making ghee roast masala.
* Set a pan on high flame, once the pan is heated lower the flame.
* Then add coriander seeds along with the remaining spices for roasting.
* Dry roast them well on low flame until fragrant.
* Remove from the flame.
* After cooling down powder it by using mixer grinder.
* Soak the red chillies in hot water for 10 minutes.
* Then grind it to a fine paste along with powdered spices, Jaggery, tamarind, garlic and salt using coconut milk.
* Grind this to a thick paste.
* Then heat a pan, add 3 Tbsp of ghee. Let it heat nicely.
* Add the grinded masala paste to it.
* Cook on medium flame until it darkens and gets crumbly.
* When the masala paste is cooked, add 2 Tbsn of hot water to correct the consistancy.
* Now add the cooked prawns into the masala and stir it well.
* Cook on high flame for 2 minutes.
* Prawns ghee roast is ready to serve.
