Kerala rice laddu
Today I might want to impart to you the recipe of rice laddu. It's a traditional kerala snack.This is a special rice ladoo. Slightly different from the authentic way. In this rice ladoo i am adding few more nuts like split moong dal, peanuts, cashew nuts and roasted chana. Because my mom used to make this ladoo with this ingredients. These ingredients make the ladoo more healthier and tasty. Authentic way of making rice ladoo only needs rice, jaggery and coconut.
The majority of the sweet bites are made with sugar yet in this formula of the rice laddu I supplanted sugar with jaggery. I'm not making any jaggery syrup in this recipe, because when we use jaggery syrup rice ladoo becomes very hard. I used crushed jaggery . Here I utilized boiled white rice however you can utilize any sort of boiled rice like matta rice.
INGREDIENTS :-
* Boiled rice - 1 cup
* Split moong dal - 1/4 cup
* Cashew nuts - 10 nos
* Peanuts - 1/4 cup
* Roasted chana - 1/4 cup
* Crushed Jaggery - 1 cup
* Grated coconut - 1 cup
METHOD :-
* Wash the rice and nuts and dry it completely.
* Heat the pan and dry roast all the ingredients one by one except jaggery and coconut.
* When it's completely cooled down, powder it by using a mixer jar.
* After powdering all the ingredients, add Jaggery and coconut to the same jar.
* Whip this to get a wet mixture, do not grind it too much, It should just merge well. This helps in rolling when adding this to the rice and nuts mixture.
* Add coconut and Jaggery mix to the rice and nuts mixture.
* Now mix well.
* Take a small portion of the mixture in your palm and compress in your fist to make tight balls.
* After making rice ball, store it in an air tight container.
* Good for 3-4 days if stored outside.
