Varutharacha Chicken curry
An yet another chicken recipe. This is Kerala special varutharacha Chicken curry. Made with fried coconut, shallots, curry leaves. This fried ingredients makes this dish more flavourful and tastier. Kerala pidi and this varutharacha Chicken curry is one of the most outstanding blend. Using coconut oil to make this curry will enhance the taste.
Let's see how to make this delicious Chicken curry.
INGREDIENTS :-
* Chicken - 1 kg
* Onion - 2
* Tomato - 1 big
* Ginger - 1 Tbsp
* Garlic - 1 1/2 Tbsn
* Green chilly - 4
* Turmeric powder - 1/2 Tsp
* Chilly powder - 1 1/2 Tbsn
* Coriander powder - 2 Tbsn
* Garam masala - 1 Tsp
* Pepper powder - 1 Tbsp
* Salt - to taste
* Curry leaves - 2 sprigs
* Coriander leaves - 2 Tbsn
* Oil - 3 Tbsp
FOR ROASTING :-
* Grated coconut - 1 cup
* Shallots - 10 - 12
* Fennel seeds - 2 Tsp
* Curry leaves - 1 spring
METHOD :-
* Put a pan on the stove add grated coconut, fennel seeds and sliced shallots.
* Fried till it becomes light brown colour. Add curry leaves.
* Turn off the flame. Let it cool down completely.
* When it becomes completely cooled down, transfer this to a mixer jar and grind to a fine paste by adding enough water. Keep aside.
* Put a khadai on the stove add oil, then add chopped onion, saute it till it becomes light brown colour.
* Then add ginger garlic paste and green chilly.
* Saute it till the raw taste is completely gone.
* Add chilly powder, turmeric powder, coriander powder and salt. Mix well.
* Then add chopped tomato, saute it till the oil separates.
* Put the chicken pieces and curry leaves in this. Turn the flame high.
* Mix well for 5 minutes.
* Add 1 1/2 cup water to this. Cook well.
* Then add roasted coconut paste.
* When it starts bubbling. Turn the flame low.
* Let it boil till the oil separates. ( 5-7 minutes ).
* Turn off the flame.
* Then add garam masala, pepper powder and coriander leaves. Mix well.
* Close the lid for 2 minutes.
* Tasty Kerala special varutharacha Chicken curry is ready to serve.
