Chicken dry roast / kerala chicken peralan

      Today I am going to prepare kerala style chicken roast, it is also called as chicken peralan. This is a dry chicken recipe. This is my mom's recipe. I tried out this recipe without any changes. It's a spicy chicken roast. It goes well with parotta. Apart from parotta, my favourite combination for this is rice, rasam and this spicy chicken roast. If you try this, I am sure you will love it.

  Fried onions, spicy masala, ghee coated in chicken pieces gives aromatic tasty recipe.

Combination :-

* Chicken roast + parotta

* Boiled rice + rasam + chicken roast


INGREDIENTS:-

* Chicken - 1 kg

* Onion - 4

* Ginger- garlic paste - 1 1/2 Tbsn

* Green chilly - 2

* Fennel seeds - 1 Tsp

* Coriander powder - 2 Tbsn

* Chilly powder - 1 Tbsp

* Pepper powder - 2 Tbsn

* Turmeric powder - 1/2 Tsp

* Garam masala - 1 Tsp

* Salt - to taste

* Coconut oil - 3 Tbsp

* Ghee - 1 Tbsp

* Curry leaves - 1 

* Coriander leaves - 2 Tbsn


METHOD :-

* Marinate the chicken pieces with chilly powder, turmeric powder, coriander powder, pepper powder and salt for 1 hour.

* Put a pressure cooker on the stove, add marinated chicken and cook it well. 

* Put a khadai on the stove, add coconut oil then add fennel seeds when it pops up.

* Add sliced onions, saute  till it becomes golden brown colour.

* Then add ginger - garlic paste and curry leaves saute it till the raw taste is completely gone.

* Add garam masala powder and ghee along with cooked chicken.

* Cook in medium flame till the water content is completely gone.

* After that dry roast it in medikum to low flame till brown colour.

* Chicken dry roast is ready to serve.
