      I have decided to make a special item using egg. If fish is not available, we can make this type of curry. This is a popular curry prepared in South India. 

   Well i am going to tell you how to make a fish curry using egg. I have prepared this curry with coconut milk, you can substitute with coconut paste. Do try you will definitely love the taste of this.

   Let's see how to make this delicious recipe.


Combination:-

* Boiled rice + egg curry

* Chapati + egg curry

* Idiyappam + egg curry


INGREDIENTS:-

* Egg - 3

* Onion - 1 small

* Ginger - 1 Tsp

* Garlic - 1 Tsp

* Tomato - 1

* Green chilly - 2

* Curry leaves - 1

* Malabar tamarind - 2

* Chilly powder - 1 Tbsp

* Coriander powder - 2 Tbsn

* Turmeric powder - 1/2 Tsp

* Fenugreek seeds - 1/4 Tsp

* Coconut oil -1Tbsn

* 1st Coconut milk - 3/4 cup

* 2nd coconut milk - 2 cup

* Salt - to taste


METHOD :-

* Put a pan on the stove , make egg omellet and cut into pieces

* Put an earthen pot on the stove, add coconut oil then add Fenugreek seeds when it pops up.

* Add chopped ginger and garlic, saute it for 1 minutes.

* Add chopped onion and green chilly saute it till it becomes light brown colour.

* Turn the flame low, then add chilly powder, turmeric powder, coriander powder and salt saute it till the raw taste is gone.

* Immediately add 2nd coconut milk along with Malabar tamarind and tomato pieces.

* Allow to boil for 7 - 8 minutes. Then add omellet pieces allow to boil for 2-3 minutes in medium flame.

* Then add 1st coconut milk, stirring continuously. When it starts bubbling turn off the flame.

* Add fresh curry leaves and 1/2 Tsp coconut oil then close the lid for 2 minutes.

* Egg curry is ready to serve.
