Uthappam
Uthappam is well known south indian recipe. Made with lentils, rice, onion and spices. This goes well with spicy tomato chutney. This can be prepared using oil or ghee. Uthappam made with ghee is more delicious than the other. Onion uthappam cooked in ghee gives a nice aroma and colourful appearance.
INGREDIENTS ;-
* Raw rice - 2 cup
* Urad dal - 1/2 cup
* Chana dal - 1/2 cup
* Fenugreek seeds - 2 Tsp
* Moong dal - 1/4 cup
* Dried chilly - 15
* Ginger - 1 inch piece
* Asafoetida powder - 1/2 Tsp
* Shallots - 20
* Salt - to taste
* Curry leaves - 2 springs
METHOD :-
* Soak the rice, urad dal, chana dal,
Moong dal and dried chilly for 3 hours.
*Coarsely grind all the soaked ingredients.
* Then add finely chopped shallots, asafoetida powder, finely chopped ginger, curry leaves and salt.
* Keep aside for 30 minutes.
* Put a pan on the stove, when the pan is hot enough pour little ghee then pour a laddle full of batter in the centre of the pan.
* Do not spread the batter too much because uthappam has to be made little thicker.
* Cook it on the medium flame.
* Sprinkle finely chopped shallots as toppings.
* Then sprinkle little ghee over the shallots and flip it.
* Make sure it is cooked well from inside.
* Transfer to a serving plate.
* Serve with spicy tomato chutney.
