Pumpkin Mango curry
Palakkad style pumpkin and mango curry
It is yet another curry from Kerala cuisine. In kerala recipes there are soo many coconut dishes. This is pumpkin and mango curry. This is an another easy and mouthwatering dish. Goes well with boiled rice. There are a few variation of this curry. Some people make this without coconut. My mom make this curry with mango. Tangy taste of the mango and the sweetness of pumpkin gives an awesome taste. So let's see how to make this curry.
INGREDIENTS :-
* Pumpkin - 300 gm
* Raw mango - half piece
* Toor dal - 1/4 cup
* Turmeric - 1/4 Tsp
* Chilly powder - 1 1/2 Tsp
* Salt - to taste
* Cumin seeds - 1 pinch
* Coconut - 3 Tbsp
* Coconut oil - 1 Tbsp
* Shallots - 2
* Jaggery - 1/2 Tsp
* Garlic - 3
* Dried chilly - 2
* Curry leaves - 1 spring
* Mustard seeds - 1 Tsp
METHOD :-
* Put a pressure cooker on the stove, add washed toor dal and turmeric powder.
* Cook it for 4 whistle. ( It depends on the cooker and the dal we used ).
* When the pressure is completely gone, add pumkin pieces, Mango pieces, chilly powder and salt.
* Boil till the pumkin and mango is completely cooked.
* Then add jaggery to this.
* Add grated coconut along with cumin seeds and shallots to the mixer grinder. And grind it to a fine paste.
* Add this coconut paste to the pumkin - mango mix. Cook it on the medium flame. Stir it continuously, when it starts bubbling switch off the flame.
* Heat oil in the pan add Mustard seeds when it pops up add garlic pieces, dried chilly. When the garlic becomes light brown colour add curry leaves.
* Add this seasoning to the curry . Close the lid and keep aside for 5 minutes.
* Pumpkin Mango curry is ready to serve.
* Serve with boiled rice.
