Brinjal stir fry / vazhuthana mezhukupuratti
BRINJAL STIR FRY
Here I accompany a one more simple recipe. This is a excellent side dish for rice. In kerala this is otherwise called vazhuthana mezhukupuratti. I made this brinjal stir fry using green variety brinjal. You can likewise substitute with other varieties of brinjals. Zesty masalas covered in fried brinjals is a fantastic side dish for bubbled rice and sambar.

Combination:-
* Boiled rice + curd + brinjal stir fry
* Boiled rice + Sambar + brinjal stir fry
INGREDIENTS:-
* Brinjal - 250gm
* Chilly powder - 1 1/2 Tsp
* Turmeric powder - 1/4 Tsp
* Pepper powder - 1/2 Tsp
* Salt - to taste
* Onion - 1
* Garlic cloves- 6
* curry leaves - 1 sprig
* Oil - 2 Tbsn
METHOD:-
* Take the brinjal and cut into medium pieces.
* Wash this pieces in salt water.
* Then add chilly powder, turmeric powder, pepper powder and salt to the brinjal pieces.
* Mix it well.
* Put a pan on the stove, add oil when it becomes hot add chopped onion.
* Saute it till it becomes transperant. Then add garlic pieces. Saute it for 2 minutes.
* Add curry leaves.
* Then add marinated brinjal pieces to this, saute it for 3 minutes in high flame.
* After that close the pan, till it cooks well ( without adding water) in slow to medium flame.
*Tasty brinjal mezhukupuratti is ready to serve.
