Microgreen Dal curry

   Microgreens are very nutritious.It contains a bigger number of nutrients and cancer prevention agents than mature vegetables.microgreens are great for people with poor kidney function. 

Including microgreens in your diet is extremely sound.


Microgreen dal curry



       Cooking time - 15 minutes

       Preparation time - 25 minutes

       Total time - 40 minutes


  INGREDIENTS:-

 * Toor dal - 1/2 cup

* Water - 1 1/2 cup

Chopped Microgreen - 1 cup 

* Chilly powder - 1/2 Tsp

* Turmeric powder - 1/4 Tsp

* Coriander powder - 1 1/2 Tsp

* Pepper powder - 1 Tsp

* Cumin powder - 1 Tsp

* Garlic - 5 cloves

* Fennel seeds - 1/4 Tsp

* Grated coconut - 3 Tbsp

FOR SEASONING:-

* Mustard - 1/4 Tsp

* Shallots  - 4 nos

* Oil - 1 Tbsp

* Dried chilly - 2 nos

* Curry leaves - 


PREPARATION:-

* Place a pressure cooker on the stove. Then add toor dal along with water and turmeric. 

* Pressure cook the dal for 4 - 5whistles. Cooking time of the dal may vary depending on their quality.

* When the pressure settle down. Open the lid check if the dal is cooked well or not.

* Dal is completely  cooked.

* Add chilly powder, coriander powder,salt, cumin powder, pepper powder and microgreen.

* Cook for 3 - 4 minutes

* Grind the coconut along with garlic and fennel seeds to a fine paste.

* Add this coconut paste to the microgreen mix. And Cook for 1 - 2 minutes.

*Heat some oil, add Mustard seeds. When it's pops add dried chilly and sliced shallots ( roast the sliced shallots until light brown colour). Then add curry leaves.

* Add the seasoning to the curry. Close it for 2 minutes. 

* Microgreen dal curry is ready.

* Serve hot with boiled rice or roti.
